NO-BAKE CREAM CHEESE COCONUT SNOWBALLS — RECIPE

🧾 Ingredients
- 8 oz (225 g) cream cheese, softened
- 2 cups shredded coconut (plus extra for rolling)
- 1 tsp vanilla extract
- 3–4 tbsp powdered sugar (adjust to taste)
- 1–2 tbsp sweetened condensed milk (optional for extra creaminess)
- A pinch of salt
Optional fillings:
- Almonds
- Mini chocolate chips
- Caramel bits
👨🍳 Instructions
1. Prepare the Base Mixture
In a mixing bowl, beat the softened cream cheese until smooth.
Add powdered sugar, vanilla, and a pinch of salt. Mix again until creamy.
2. Add the Coconut
Fold in the shredded coconut.
If you prefer a softer, richer texture, add 1–2 tbsp of sweetened condensed milk.
Your mixture should be soft but rollable — add more coconut if too sticky.
3. Chill the Mixture
Cover the bowl and refrigerate for 20–30 minutes.
This firms the mixture and makes rolling easier.
4. Roll the Snowballs
Take 1 tablespoon of the mixture and roll it between your palms.
(If adding fillings, press a chocolate chip or almond into the center before rolling.)
5. Coat in Coconut
Roll each ball in a bowl of shredded coconut until completely covered.
This gives it that perfect “snowball” look ❄️
6. Chill Again (Optional)
Refrigerate for an additional 15 minutes for best texture.
